Chicken/Turkey Salad

An excellent recipe, nutritious, good tasting and with varietal taste/textures.

Serve as a sandwich spread or as a salad with lettuce & tomatoes or fruit

Use cooked fresh or leftover Chicken/Turkey meat chopped finely or
ground using a plate with large (3/8-1/2) aperture openings.

1-2 lbs cooked poultry (White or dark or mix)
2-3 stalks celery chopped to 'pea' size bits
6-9 sweet gherkins chopped to 'pea' size bits
1 granny smith apple chopped to 'pea' size bits
(To prevent darkening chop apple into a bowl with 2 cups water and 1 tsp Fruit Fresh,drain and add)
1 small onion grated through large holes on grater
1/2 cup walnuts or pecans chopped/broken to 'pea' size bits
1-2 tsp celery salt
2-4 Tbs granulated sugar
4-6 Tbs Miracle whip
juice of one lemon

This recipe is a bit time consuming but the product is worth every minute. You'll wish you had doubled it! After you have tried it, you may wish to make additions, deletions or variations and thats ok as long as you remember that it is the texture that gives you a different taste with almost every bite.

Place all 'prepared' ingredients in a large mixing bowl, add one half of the sugar and celery salt. Stir and toss easily to distribute evenly. Taste for sweetness and spicing, add remaining if desired plus add lemon juice and toss lightly.

Now stir in 1/2 of Miracle Whip and continue adding only until it binds all of the ingredients.

Serve immediately or refrigerate.
