Apple Pan Dowdy

Apple Preparation

Preheat oven to 375f.
Lightly grease a 9 inch cast iron skillet or heavy baking dish.

4 to 5 cups thinly sliced peeled apples
1/2 cup light molasses *
1/4 cup water
3 tbsp butter **

Combine apples, molasses, butter and water. Bring to a boil and simmer over medium heat for about 5 minutes, stirring occasionally. Place apple mixture in greased skillet.

Topping Preparation

2 cups self-rising flour ***
1/4 cup shortening
1/2 tsp cinnamon
1/4 tsp nutmeg
3 tbsp sugar
1 cup milk
Prepare mixture according to directions for Sour Dough Biscuits , but mix only until all dry ingredients are moistened. Drop by tablespoon onto the hot apple mixture.

Bake for about 20 minutes; until topping is firm and brown. Serve warm with light cream.

Substitutions

* Molasses: lightly carmelize 1/2 cup (tightly packed) dark brown sugar. Add enough water, about two tbsp., to equal 1/2 cup.
** Margarine is acceptable, but does not equal the flavor that butter gives.
*** In place of self rising flour, see the dry ingredients for Sour Dough Biscuits .
